Pimm’s Lollies

These delicious and simple Pimm’s lollies are perfect for summer and guaranteed to impress your guests.

Serves: Aprox 8 lollies  Prep time: 10 minutes plus 4 hours freezing

You’ll need

  • 300g BerryWorld strawberries and raspberries
  • Leaves from 1 stem of mint
  • 50g icing sugar
  • 100ml Pimm’s
  • 200ml Lemonade
  • To decorate:
  • 4 slices cucumber, quartered
  • 4 strawberries, sliced
  • What to do:

What to do

  1. Put the strawberries, raspberries, mint leaves and sugar into a blender and whizz until smooth. Pour through a fine sieve to remove the seeds.
  2. Combine the berry mixture with the Pimm’s and lemonade and stir well.
  3. Put the cucumber and strawberry slices into the lolly moulds and pour in the liquid.
  4. Freeze for 4 hours or until solid.
