Store cupboard salad with Isle of Wight tomatoes

With no compromise on taste this versatile salad with superb Isle of Wight tomatoes can be adapted to make the most of handy store cupboard ingredients. Delicious and ready to eat in no time at all!

Serves: 4

Prep time: 15 mins

You’ll need: 

  • 300g Isle of Wight Tomatoes, cut into bite size pieces
  • 200g of any combination of frozen edamame beans, peas or broad beans, defrosted
  • 400g tin of cannellini beans, chickpeas or any beans you have handy
  • 100g bulgar wheat or cous cous or quinoa, cooked and cooled according to the pack instructions or use a ready cooked pack
  • ¼ red onion or two shallots, chopped
  • 1 lemon
  • Olive oil
  • 1 tsp Dijon mustard
  • 1 tsp cumin seeds, toasted
  • 1 small bunch mint, chopped
  • Salt and pepper

What to do: 

In a large bowl, combine the tomatoes, beans and peas, grains and onion. Whisk the juice of the lemon with 2 tbsp olive oil the mustard and the cumin seeds. Tip into the bowl and toss everything together. Add the mint, season, toss, and serve.
