Avocado toast 3 ways

Avocado on toast makes for an easy breakfast, a light lunch, or a satisfying afternoon snack. 

Here are three new ways you can prepare avocado on toast, using just a handful of healthy ingredients.

Avocado Toast with Blue Cheese, Radish & Walnut

You’ll need

  • 1 slice of sourdough bread, toasted
  • ½ ripe avocado, mashed
  • Squeeze of lime
  • Salt and freshly ground black pepper
  • 3 French breakfast radishes, sliced
  • 20g Danish blue cheese, crumbled
  • 4 walnut halves roughly chopped and toasted
  • Drizzle of olive oil (optional) 

What to do

  1. Combine the mashed avocado and lime juice and season well with salt and black pepper. Spread on the toast.
  2. Lay the radish slices over the avocado then crumble the cheese over the top, scatter with walnuts and season.
  3. Drizzle with olive oil if desired.

Avocado Toast with Isle of Wight Tomatoes, Radishes & Cayenne pepper

You’ll need

  • 1 slice of sourdough bread, toasted
  • ½ ripe avocado, mashed
  • Squeeze of lime
  • Salt and freshly ground black pepper
  • 1 large or 3 small, ripe tomatoes, sliced
  • 3 French breakfast radishes, sliced into matchsticks

Pinch of cayenne pepper 

What to do

  1. Combine the mashed avocado and lime juice and season well. Spread on the toast.
  2. Slice the tomatoes and radishes and lay them on the avocado then sprinkle with a pinch of cayenne pepper and salt.

Avocado Toast with Feta, Mint and Celery

You’ll need 

  • 1 slice of sourdough bread, toasted
  • ½ ripe avocado, mashed
  • Squeeze of lime
  • Salt and freshly ground black pepper
  • 20g feta
  • 1 stick of celery, sliced
  • 2-3 mint leaves, torn 

What to do

  1. Combine the mashed avocado and lime juice and season well. Spread on the toast.
  2. Spread the celery slices over the avocado then sprinkle with the feta and torn mint leaves.

NOTE: A poached egg would be a welcome addition to any of these recipes!
