My brekky egg pot
Oil a small ramekin dish with oil or butter. Line with boiled ham, cover the bottom and then line round the inner edge so the ham completely covers the dish then break an egg onto the ham, pepper – no salt as the ham can be salty. Then sprinkle on grated cheese as much or as little as you like. Then bake for 15 mins in a hot oven.
Lovely for lunch as well served with a green salad. – Enjoy
