Easy Peasy Coronation Chicken

This is my all time favourite recipe for Coronation Chicken .. so easy to make and very tasty, and the great thing is you can decrease of increase the quantities very easily to make it for more or less people.  If you prefer to use a mixture of chicken thighs and legs to reduce the cost that will work too, or even a whole cooked chicken. I tend to cook by taste, so the quantities are a rough guide … just keep tasting and adjusting to taste.

 

Serves 8

INGREDIENTS:

8 cooked chicken breasts, cut into bite sized pieces

250g Greek Yoghurt

250g Mayonaise

4 dessert spoons Tikka Masala Curry Paste

4 dessert spoons Spiced Peach Chutney (Waitrose do this) or Curried Fruit Chutney

Small tin apricots in natural juice, sliced or mango or peach if you prefer

Bunch fresh coriander, chopped

Seasoning

METHOD:

In a large bowl, combine the Greek yoghurt, mayo, curry paste and chutney and season to taste.

Add half the chopped coriander.

When you like how it tastes, add the chicken and stir well and then leave in the fridge for the flavours to infuse the chicken.

When ready to serve, stir in the sliced apricots, and then tip into a serving dish and top with the remaining coriander.

 

Great served with a rice salad, or hot new potatoes, and a green salad.
