Heat oven to 180°C
150g Plain Flour
75g Self raising Flour
5g Bicarb soda
10g Ground ginger
5g Mixed spice
200g Dark brown sugar
1 Small tin pineapple
180 ml Corn Oil
1. Sieve dry ingredients into a bowl.
2. Mix pineapple, bananas and eggs together in food processor. Stir into above
3. Stir in corn oil slowly until well mixed
4. Divide between two oiled foil tray bake containers.
5. Place in oven – bake for 35/40 minutes
6. Finish with cream cheese topping
