Hummingbird cake

Heat oven to 180°C

Ingredients

 150g Plain Flour

75g Self raising Flour

5g Bicarb soda

10g Cinnamon

10g Ground ginger

5g Mixed spice

200g Dark brown sugar

2 Bananas

1 Small tin pineapple

2 Eggs

180 ml Corn Oil

Method

1.  Sieve dry ingredients into a bowl.

2. Mix pineapple, bananas and eggs together in food processor. Stir into above

3. Stir in corn oil slowly until well mixed

4. Divide between two oiled foil tray bake containers.

5. Place in oven – bake for 35/40 minutes

6. Finish with cream cheese topping

omit the pineapple and bananas and use 8oz drained grated courgette instead. Delicious.

Sounds like a recipe I use for carrot cake which is delicious and well tried and tested

I have just made this and it is cooking in the oven. Why does it have to be cooked in two tins? It looks quite high in the picture, maybe it will rise a lot. Or do I put the cheese cream in the middle and sandwich them together adding cream on top as well?

Hi,
The topping (not for the calorie counters)
90g Butter
180g Philadelphia Cheese (or similiar)
360g Icing sugar

Mix to a smooth cream and pipe on top of cake.

This is making my mouth water!! Do you have a recipe for the cream cheese topping. Also, roughly what size are the baking tins? 🙂
