Quinoa with vegetables

Quinoa with vegetables and or chicken or fish

1 cup Quinoa (rinsed in cold water)
Coconut oil, olive oil or any oil you use for frying.
1 onion chopped
1 large green pepper, any colour will do.
Mushrooms (about 5 button type)
1 small stick of celery chopped
Broccoli separated into small pieces

A few leaves of fresh oregano or basil
You can use any vegetable of your choice, whatever is handy.


  • Put the Quinoa in a pan and cover with water
  • Bring to the boil and then leave to simmer for about 15 minutes or until the grains still have some crunchiness. They should have absorbed all the water leaving the grains nicely separate.
  • In another pan.
  • Fry the onions until opaque
  • Add the rest of the vegetable and fry together until nicely brown but still firm
  • Add salt and pepper to taste
  • At this stage, you can add chopped cooked chicken or flaked fish if you wish.
  • When done., toss the quinoa and vegetable mix together, stir in the fresh oregano or basil
  • And turn out into a serving dish.

Voila, quick and easy.

I love quinoa ... very versatile ... I made a salad yesterday similar to yours and added a dressing of soy sauce, sesame oil, garlic and lemon. I also cheated and used ready cooked quinoa so it was ready in minutes! Thanks for sharing your recipe 🙂

Glad you like it Sally, hope others do. I love Quinoa, sometimes cook it with a stock cube, gives it a nice flavour.
I like your suggestions.
I will give your additions a go, love the idea of soy sauce, garlic and lemon.
