My mom was great at baking, her pastry was wonderful. She taught me to cook but the baking never rubbed off. I have tried making sponge but failed. They were rising really nicely then suddenly sunk in the middle. I made fruit cake years ago but haven't really ventured. I would love to go to a cookery class to do it properly.

Hi SnapperStephen
My mom was also great at baking. Never happier than when she was in the kitchen.
My parents had two cafe's at different times/places and mom did all the cooking/baking.
I am not bad at baking myself. Pastry always turns out ok.
Just made some scones and raspberry crumbles this morning.
Must say, these days, the urge to bake gets weaker as time goes on but being on my own, I think makes a difference

Hi Debbie, you seem like the right kind of person to give me some advice !! lol How do you get a sponge cake to be light and fluffy ? I always think mine are a little too "dense"
