Cheap eats and recipe swaps

Hello there. I am a old guy who enjoys cooking.


My speciality is international poor people food.


The same peasant dish in one country can be an upscale foreign delight in another.


I would like to share and swap these cheap but healthy delights with others.

Vegetable Stir-Fry:

Ingredients:

Assorted vegetables (carrots, bell peppers, broccoli, snap peas, etc.)
Firm tofu or chicken (optional), sliced
Soy sauce or teriyaki sauce
Garlic and ginger, minced
Cooking oil
Cooked rice or noodles
Instructions:

Heat oil in a pan over medium heat and sauté garlic and ginger until fragrant.
Add the sliced tofu or chicken (if using) and cook until lightly browned.
Add the assorted vegetables and stir-fry until they are tender-crisp.
Pour in soy sauce or teriyaki sauce to taste and continue to cook for a couple of minutes.
Serve the stir-fry over cooked rice or noodles. Then enjoy your flavorful and budget-friendly meal!

Since the author doesn't want to share any of his recipes, I will try my luck. My latest discovery is an easy Alfredo sauce(https://sweetandsavorymeals.com/homemade-alfredo-sauce/):
Ingredients:

1. 1/2 cup unsalted butter
2. 1 cup heavy cream
3. 1 cup grated Parmesan cheese
4. 2 garlic cloves, minced
5. Salt and pepper to taste
6. Optional: Fresh chopped parsley for garnish

Instructions:

1. In a medium-sized saucepan, melt the butter over medium heat.
2. Add the minced garlic to the melted butter and cook for about 1-2 minutes until fragrant, stirring occasionally.
3. Pour in the heavy cream and stir well to combine with the melted butter and garlic. Bring the mixture to a simmer.
4. Reduce the heat to low and gradually add the grated Parmesan cheese while continuously stirring. Stir until the cheese is completely melted and the sauce is smooth.
5. Season with salt and pepper to taste. Remember, the Parmesan cheese is already salty, so be cautious while adding salt.
6. Continue to cook the sauce on low heat for another 2-3 minutes, stirring occasionally, to allow the flavors to meld together.
7. Remove the sauce from heat. If it's too thick, you can add a little more cream to thin it out.
8. Serve the Alfredo sauce over your favorite pasta or use it as a sauce for other dishes. Garnish with fresh chopped parsley if desired.
