Looking for a Vegan Cheese Sauce recipe

Hi, does anyone ha e a quick and easy recipe for a vegan cheese sauce please.

Hello SissieSis, i DO have a vegan cheese recipe, but I have to go thru my huge bunch of recipe cards to find it, but I will get back to you later. But in the meantime, I was wondering = Are you a Vegan, or just "experimenting," and that's why your request for vegan cheese sauce ? I ask this because I am a "partial vegan" and I sometimes feel "isolated" because NOBODY i know is a vegetarian or vegan. When I go grocery shopping, everyone who's in the vegetarian + vegan food section, putting items in their cart, are YOUNG people ! I think that's because older folks are "set in their ways," and we seniors weren't brought up in an era where there were a lot of people "eating meatless." < i.e. When I was a young girl, I only OCCASIONALLY heard about someone being a vegetarian, and when I did hear this, it was always some famous, eccentric person ! Anyway, I'd love to know if you are a vegan, and if so, is it for "humane reasons" or for "health reasons ?" Best regards, Vicki

Hi Catlady. I am and have been vegetarian for many years. It came on gradually with the exclusion of veal when I heard how they didn’t allow the.animals to move so the meat stayed light. Then I saw a program about fish on trawlers flapping about on the decks, all being loaded on top of each other but alive. So fish came next. (I’m not averse to the catching of fish on a single line if killed immediately).

Beef and pork next when I heard what they inject into the animals before being slaughtered (do we really want these things in our bodies) and last came chickens in their crammed chicken sheds kept in appealing conditions.

I buy organic meat for my husband and I try to buy organic free range eggs for both of us.

I do watch cooking program as am not an adventurous cook (limited by hub who just likes plain meals) and have forayed into some vegan foods after a friend ate only this to help with a serious disease which appeared to work. However, I would call myself vegetarian purely because I just don’t like the idea of chewing the meat. I can’t bear the thought of ducks being force fed for pâté.

I watched a program The Scran Van where he made a vegan cheese sauce which aroused my curiosity.

Hence my vegetarian story from my 30’s to my now 70’s.

Hello SissieSis, So glad to see your reply -- about "vegan cheese sauce" and about being a VEGETARIAN. I don't know if it's the same over in England, but here in the U.S., it seems like 98% of folks who are vegans or vegetarians are YOUNG people ! Not that there's anything wrong with this, but it does make me feel sort of "isolated." When I go to the grocery store, (almost) everyone who's in the "vegan + vegetarian aisle," buying their meatless items and entrees, are young folks --- in their 20's + 30's. I think that there's 2 reasons for this = The main reason is that, when I was being brought-up (all those yrs ago), there weren't a lot of vegetarians around. The only time I heard about a person being a vegetarian was when they were some artistic or eccentric man or woman. So, since most of us "go with what we know" and what we're use to --- and we older people are USE TO eating meat --- well, I think this is a major reason you don't see a lot of "senior vegetarians." The 2nd reason I don't see very many "old" vegetarians is because of WHERE I LIVE ! < I live in a sm. southern town that is very much "behind the times." Most folks here not "open" to new ways of thinking, and they think that I'm crazy for not eating meat !

Here's a quick and easy recipe for a vegan cheese sauce:

Ingredients:

1. 1 cup raw cashews, soaked in water for at least 2 hours
2. 1/4 cup nutritional yeast
3. 2 tablespoons lemon juice
4. 1 clove garlic, minced
5. 1/2 teaspoon onion powder
6. 1/2 teaspoon Dijon mustard
7. 1/2 teaspoon smoked paprika
8. 1 cup vegetable broth or water
9. Salt and pepper to taste

Instructions:

1. Drain the soaked cashews and rinse them under cold water.
2. In a blender or food processor, combine the cashews, nutritional yeast, lemon juice, minced garlic, onion powder, dijon mustard, smoked paprika, and vegetable broth (or water).
3. Blend the ingredients until smooth and creamy, scraping down the sides as needed.
4. If the sauce seems too thick, you can add a little more vegetable broth or water to achieve the desired consistency.
5. Taste the sauce and season with salt and pepper according to your preference. Adjust the other seasonings if needed.
6. Transfer the sauce to a small saucepan and heat it over medium-low heat, stirring constantly, until warmed through.
7. Once heated, the sauce is ready to be used in your favorite dishes. Pour it over pasta, use it as a dip for vegetables, or incorporate it into any recipe that calls for cheese sauce.
