Healthy packed lunches
Staying healthy and planning workday lunches can be a challenge any time of year.
If you’re tired of the same old sandwich day in and day out, here’s a few of our favourite recipes from around the web worth trying – you can make most of them ahead in batches, saving you extra time and effort in the morning.
Cous cous salad
One big batch of cous cous salad made on Sunday evening can see you through the week. Cous cous cooks in just minutes and you can add everything from vegetables to chicken and feta cheese. One of our favourites is this savoury Southwest cous cous salad.
Vegetarian chilli is another make-ahead favourite you can enjoy all week. Instead of prepping a new lunch each morning, one evening of effort will see you through several lunches. This dish is especially delicious when you want something that’s hearty but still healthy. This recipe can be ready in under an hour.
Mediterranean pasta salad
Mediterranean flavours like feta, olives, peppers and aubergine taste delicious mixed together and can be thrown together in less than the time it takes to cook the pasta. One big batch can cover several lunches and is endlessly customisable when you make use of whatever is already in your fridge. If you’re in need of a recipe, this one is a great place to start.
Turkey and farro salad
Farro is another grain that makes a great base for salads because it’s healthy, hearty and filling. It has a slight nutty flavour and is packed with fibre, protein and iron – just what you need to get you through a busy day. This smoked turkey and farro salad is another recipe you can make ahead and enjoy all week.
Spiralized cucumber and sesame salad
If you’re partial to a spiralizer, then this recipe works a treat at lunch time. Spiralized cucumber or courgette makes for a healthy base, and the Asian-inspired flavours in the dressing mean it’s anything but the same old at lunchtime.
Soup is ideal for lunch when the weather outside means you’d rather be snuggled up at home than sitting at your desk. Lentil soup is a great choice because it’s healthy, flavourful and packed with vegetables. This spicy lentil soup recipe adds an extra kick to help take things up a notch.
