Chilli Glazed Pork with Sweet Potato Mash

It’s a quick meal to make, low in calories and tastes lovely with a blend of flavours.

Ingredients:

4 Large Pork Chops
I tablespoon Olive Oil, plus one teaspoon
1 teaspoon Chilli Powder
Salt and Black Pepper
2 Tablespoons Maple Syrup
2 Medium Sweet Potatoes
1  Small onion, chopped
1  5Oz Packet Baby Spinach Leaves, chopped.
Method:
  1. In a small bowl, place the Chill Powder, maple syrup, 1 tablespoon of Olive Oil, and Salt and Pepper.
  2. Brush the chops on both sides with the mixture.
  3. Heat a large frying pan and add them to it, frying each side for about 10 minutes and basting with the mixture, until cooked through, keep warm.
  4. Peel and slice the Sweet Potatoes and cook for about 15 minutes, then drain, then mash. Heat the one teaspoon of oil.
  5. In a medium frying pan and cook onion over a medium heat, until beginning to brown ( about 5 minutes), add the spinach leaves and cook until wilted,( about 2 minutes).
  6. Divide the Sweet Potatoes, between four plates, add the onion and Spinach mixture, and arrange a chop on top.
  7. If you don’t have Maple Syrup, you can use runny honey
