Pasta and Asparagus Salad

Pasta and Asparagus Salad

2 cups Penne or similar pasta, cooked, drained and cooled

6 rashers of bacon, cooled and crumbled

3-4 ounces feta cheese, crumbled

1-2 cups cooked fresh asparagus, chopped in 2 inch lengths

Dressing:

2 Tbl Spoon Olive oil

2 Tbl Spoon Balsamic vinegar

Salt and pepper to taste

2 tsp mustard

 

  • Mix dressing ( I use a small glass jar with a lid and shake it).
  • Place ingredients in a medium sized bowl, and toss with dressing.
  • Drizzle with a bit of lemon juice, and/or add a shaving of parmesan as desired.
  • Best if chilled for 1/2 hour in fridge.
