Money saving baked ham

For a bit of cost saving, I buy a gammon joint; cut it into 3 or 4 pieces depending on size; freeze the spare portions; and cook one portion to have as a couple of meals and also sliced for sandwiches.  I have an all in one pot cooker so the instructions are for this, but easily adaptable.  I’ve just cut a decent 1kg joint (costing £7.20) into 4 pieces – so each portion will be about £1.80 and that will give you a dinner and plenty over for breakfasts / sandwiches.  Much tastier and cheaper per portion than buying a pack of sliced ham.

  • 1 x gammon joint
  • Cider
  • Apple juice
  • Dijon mustard
  • Maple syrup
  • Honey
  1. Soak the gammon for an hour or so to make less salty.
  2. Put in a pressure cooker and add cider and / or apple juice up to the minimal line of liquid in the pressure cooker.
  3. Pressure cook for 10 minutes on high; then quick release the pressure.
  4. Make a glaze by mixing maple syrup; honey; dijon mustard – you don’t need much – 2 dsrtsp maple; 1 dsrtsp honey; 1/2 tsp mustard.
  5. Put the glaze in a small tin foil baking tray (saves washing up!).
  6. Put the gammon joint in the tray and turn over in the glaze so that it is on all sides.
  7. Air fry uncovered for 7 minutes; turning in the glaze half way through, then remove tray from cooker and eat hot or cold.
