Slow Cooker Beef & Shallot Chilli

What could be tastier than beef cooked long and slow? 

This chilli recipe is succulent, packed full of flavour and couldn’t be easier.  Prepared in the slow cooker in the morning and left to cook during the day it’s all ready for supper, leaving you free to get on with your day.

Serves: 4

Preparation time: 10 minutes

Cooking time: 8 hours

You’ll need

  • 10 round shallots
  • 500g diced braising steak
  • 1 tbsp plain flour
  • 2 tsp smoked paprika
  • Sea salt & freshly ground black pepper
  • 1 tbsp rapeseed oil
  • 2 tsp cocoa powder
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • 1 tbsp sweet chilli sauce
  • 1 pint beef stock, hot
  • 1 tin chopped tomatoes
  • 1 tin kidney beans
  • 1 cinnamon stick

What to do

  1. Place the shallots in a bowl and pour over boiling water. Allow the shallot skins to soften in the water for 10 minutes before easily peeling – keep the shallots whole.
  2. In the meantime, place the beef in a large bowl along with the flour, 1 teaspoon of paprika and salt and pepper. Thoroughly coat the beef in the flour mixture.
  3. Heat the oil in a large frying pan and in batches brown the meat well until just caramelised. Once browned, place the meat into the slow cooker along with the prepared shallots. Fry the remaining meat.
  4. In a large jug dissolve the cocoa powder in 20ml of hot water. Add the cumin, cayenne pepper and sweet chilli sauce to create a thick paste. Stir in the hot stock before pouring it all into the slow cooker. Add the chopped tomato, kidney beans and cinnamon to the slow cooker along with a large pinch of salt and pepper. Stir all the ingredients together and place on the lid.
  5. Cook on ‘low’ for 7 – 8 hours (3.5 – 4 hours on ‘high’) until the meat is tender and the sauce has thickened. Half an hour before serving, if the sauce needs reducing further, pour the chilli into the pan and simmer over a medium heat until the sauce has thickened to your desired consistency.

Alternatively, you can cook this recipe in a large casserole dish with a lid by placing in a conventional oven at 160C/140C fan/gas 3 for 3 hours or by simmering gently on the hob over a low heat for 2 hours, stirring occasionally.

Interesting recipes. Having just read your article on hidden sugar, why do you not include nutritional info with them. Or have I missed it somewhere?

My slow cooker is 33 years old.... made by Tower! It creates steam which adds to the liquid in the pot, so I had to reduce the sauce by heating in a pan. It was still yummy and this recipe has made it to my own recipe book!
