Dad’s lemon drizzle cake

This recipe is from my dad – so easy….and so good!

Ingredients:

4 oz soft margarine
4 oz caster sugar
4 oz self-raising flour
1 tsp baking powder
2eggs
grated rind and juice of a lemon
4oz granulated sugar

What to do:

Put everything in a bowl and whizz it until combined.

Put into a lined non-stick tin, approx 8 inches by 6 inches or a loaf tin and bake at 180º fan, or gas mark 4 for about 20-25 minutes until golden and risen.

Whilst it’s baking make the drizzle by combining the juice of the lemon with 4 oz of granulated sugar, and when the cake is taken out of the oven and is still very hot, spoon the drizzle over the top, then leave to cool, when the topping will be lovely and crunchy.

So easy….and so good!

Its been a long time since I tasted lemon drizzle cake, so as i have lemons & lime in my fruit basket, i will give your dads reciepe a try.
I cant wait to taste & enjoy it.

Sounds yummy! I’m not a baker so probably have a daft question here; if you put ‘everything in a bowl & whizz it’ what do you make the drizzle with? Or, if you save the last two ingredients for the topping (lemon juice/rind & sugar), what then makes the cake lemony?

stillworking, I think your daughter was having you on. There are masses of websites (including EBay and Amazon) where you can buy all kinds of cookware. Since Shrewsbury turned into a ghost town (any councillors reading this, please note: local people who pay our rates are not amused), I buy almost everything online now. I don't want to, but you can't get all the necessities of life from charity shops, building societies, cafes and boarded-up shops....

I didn't have an 8 x 7 tin so did it in the loaf tin, it took nearer 45 mins to cook. , it is very sweet and crunchy, and scrummy and I'm going to enjoy eating it
