Dad’s lemon drizzle cake
This recipe is from my dad – so easy….and so good!
4 oz soft margarine
4 oz caster sugar
4 oz self-raising flour
1 tsp baking powder
grated rind and juice of a lemon
4oz granulated sugar
What to do:
Put everything in a bowl and whizz it until combined.
Put into a lined non-stick tin, approx 8 inches by 6 inches or a loaf tin and bake at 180º fan, or gas mark 4 for about 20-25 minutes until golden and risen.
Whilst it’s baking make the drizzle by combining the juice of the lemon with 4 oz of granulated sugar, and when the cake is taken out of the oven and is still very hot, spoon the drizzle over the top, then leave to cool, when the topping will be lovely and crunchy.
So easy….and so good!
