Make your own frozen treats
Long, sunny days sitting in the back garden are just round the corner, so why not make sure you have the perfect, healthy snack for your sunbathing?
Make your own frozen treats – from delicious ice lollies to decadent, dairy-free ice cream – and stay cool and refreshed on even the hottest afternoons.
Berry good ice lollies
Makes 10 small lollies, depending on the size of your moulds!
Incredibly easy to make and boasting plenty of vitamins as well as all of the health benefits of natural yoghurt, these are some of the most satisfying summer treats around.
- Mash 100g of blueberries with two teaspoons of honey in one bowl and do the same with 100g of raspberries and two more teaspoons of honey in another.
- Choose a 300g pot of healthy, flavoured Greek yogurt – vanilla or coconut are ideal – and scoop a spoonful into each of your lolly moulds. Layer with alternating spoonfuls of blueberries and raspberries, being sure to add yogurt between each fruit layer.
- Place wooden lolly sticks or the plastic bases that came with your mould in the mixture and leave in the freezer overnight. To serve, run a small amount of warm water over the mould.
Vegan coffee coconut ice cream
Serves six
Enjoy all of the flavour and creamy texture of dairy ice cream with this vegan recipe for summer bliss.
- Whisk three cans of good quality coconut milk with 240g of raw sugar and 200ml of strong brewed coffee over a medium heat. Should take about five minutes for ingredients to be combined.
- Whisk in one and a half teaspoons of vanilla extract and transfer to a large bowl. Place in the freezer.
- After an hour, remove to whisk the mixture again and add air and fluffiness. Repeat every hour until desired texture is reached. If you have an ice cream maker, you can use it to skip this step!
Super refreshing watermelon sorbet
Serves eight
Cut through the summer heat with this simple, sweet and cooling treat – perfect for adults and kids alike.
- Combine 200g of white sugar with 110ml of water and 55ml of lemon juice over a medium heat. It should take about five minutes for all of the sugar to dissolve.
- Transfer the mixture to a bowl and place in the fridge until it’s cooled – this will take roughly 30 minutes. Meanwhile, blend 500g of watermelon in a food processor.
- Blend your sugar mixture with your watermelon and either complete the process in an ice cream maker or simply freeze for an hour then remove and whisk. Repeat this process until the sorbet is completely frozen and the desired consistency.
