Summer roulade recipes

Light, sweet and easy to reinvent using new flavours, the roulade is the perfect showstopper for your next family lunch.

And though it looks difficult, this dessert is one any home baker can master.

As summer rolls around, try freezing this dish and serving it cold – it makes for a decadent and grown-up version of an ice cream cake. Here’s three of our favourite recipes you can try at home.

Strawberry meringue roulade with mascarpone

This recipe is a classic take on the roulade – The crisp and chewy meringue encases a rich strawberry and mascarpone cream filling, and the almonds around the outside add a delicious crunch.

Strawberry and chocolate ganache roulade

Make roulade even more indulgent with chocolate ganache. The chocolate and strawberry pair together beautifully, while the meringue base helps ensure this is decadent without feeling too heavy.

Raspberry and passion fruit meringue roulade

The tropical taste of passion fruit makes this recipe perfect for summer. The addition of raspberry and lemon curd help make the filling vibrant and delicious – perfect for a garden party!
