Chicken and Vegetable Soup

Prep time about 30 mins
Cook time 3 hrs

serves about 5

Ingredients:

Chicken Caracas

3 leeks washed and diced

4 carrots washed and peeled grated

4 potatoes wash peeled grated

2 vegetable stock cubes

1 oxo cube

salt pepper

 

Method:

Sweat leeks off with a knob or two of marg

Add chicken carcass or use other chicken cooked first add stock about a good 2 pints

Add carrots potatoes

Season leave to come to boil then simmer for two hours

Take the chicken out take bones off as many as possible

The bones give flavour to the soup

If required put through a blender I prefer not to

Serve with crusty bread rolls or soft ones
