3 Blueberry Recipes To Freshen Up Your Breakfasts
Freshen up your recipe repertoire with three of our favourite fruity ideas to help you get your 5-a-day
It’s always good to aim for variety and plenty of colour when selecting your favourite fruits and vegetables, so blueberries are a great addition to your shopping basket. Plus, blueberries contain the mineral manganese, which helps turn food into energy, keep your bones healthy and normal and protect cells from ‘oxidative’ stress. Try these recipes for new ways to enjoy this fabulous fruit.
Layered Granola Breakfast Pot
- 250g frozen summer fruits
- 250g Greek yoghurt
- 100g Superberry granola
- 1 small handful raspberries, to garnish
- 1 small handful blueberries, to garnish
- 2 tbsp honey
Blueberry, Pistachio and Maple Pancakes
- 4 pancakes
- 8 large spoons of Greek yoghurt if serving for breakfast or 500ml vanilla ice cream for a sweet treat
- 200g blueberries
- 60g pistachios, shelled and chopped
- 4 tbsp maple syrup
Buttermilk Pancakes with Red and Blue Berries
- 100g strawberries, hulled and halved
- 100g raspberries
- 100g blueberries
- 4 tbsp maple syrup
- 150g plain flour
- ½ tsp baking powder
- 3 eggs
- 2 tbsp sunflower oil, for cooking
- 100ml buttermilk
