This year, we’re all about mixing up your menus to find new, exciting and healthy dishes to add to your repertoire.
With the start of the new year often comes the resolution to choose healthier options, and thankfully, we’ve got all the inspiration you’ll need, whatever the dining occasion.
From quick lunches to something a little more special for entertaining guests, take a look at our ideas and get your January menu off to a great start.
Choosing seasonal food can be a great source of inspiration for your weekly menu. You can change up your ingredients as the seasons come and go which provides you with natural variety, while also enjoying foods when they’re at their best, giving you tasty flavours to enjoy.
January is all about root vegetables, meaning parsnips, beetroot, carrots and butternut squash make excellent seasonal options. Root veg is also a great choice to include in soups, such as this recipe for Carrot and Coconut Soup and this recipe for Parsnip and Toasted Cumin Soup with Parsnip Crisps.
Butternut squash makes an excellent addition to risottos, including this recipe for Butternut Squash and Chorizo Risotto and this one for Butternut Squash and Kale Risotto. While beetroot is often most associated with being pickled, it also makes and excellent addition to smoothies. Try it in this recipe for a Beet the Blues Smoothie.
When grabbing a quick lunch or tea it can often be tempting to opt for something a little less healthy than usual. Thankfully, we’ve got plenty of ideas for easy meals that’ll be ready in no time at all.
Taking just 15 minutes in total, this recipe for Quorn Sausage Casserole with Beans is filling, easy and super tasty, while this recipe for Lime and Chilli Mackerel Sizzle Pittas takes just 8 minutes – that’s one speedy lunch!
Another speedy recipe, Avocado and Egg on Toast is a simple yet delicious meal – enjoy it for breakfast to mix up your mornings. This Broccoli Super Bowl Salad takes just 30 minutes to make, but you can prep it in advance to pack up and take with you.
When special occasions come around, it can also be tempting to opt for indulgence over healthier meals. However, with our recipe ideas, you can tuck into something delicious, while still enjoying healthy ingredients. For example, our recipe for a Lower-Fat Lasagne is easy to make and sure to be a crowd pleaser, while options such as Tuna Steaks and Jewelled Stuffed Butternut Squash make excellent options for the main event of your dinner party.
