Cook chopped up stem first, in vegetable broth for 10 minutes, then add florets. Simmer till soft then blitz. Add a chunk of cheese then blitz. Taste then add more cheese as desired and a couple of tablespoons of cream...or milk. Blitz again. Add pepper, if desired. Serve with homemade croutons.
